was a white wine: Moscaldello di Montalcino.
In the meantime Clemente Santi started to study a variant of the classical Sangiovese, the Big Sangiovese (Sangiovese Grosso) called Brunello because of the particularly dark colour. This tradition, handed down in his family, gave a production that locally, in the following years, became particularly appreciated also if limited by the high price. Only after the 1950 Brunello became a famous wine in Tuscany, Italy and then in all the world. Nowadays Brunello of Montalcino is guaranteed by the important and prestigious: D.O.C.G (denomination of controlled a guaranteed origin) and it’s a clear and brilliant wine, with a garnet-red color.
Thank to his characteristics Brunello of Montalcino endures long maturations improving if well preserved in fresh cellar with costant temperature, dark, without noise and smell and putting the bottle layed down. Brunello of Montalcino must be at least 12% of alcohol, submitted at two years of refinement in oak’s case and four month in the bottle after the grape harvest. The elegance and the corp that distinguish Brunello makes good combining with typical tuscan dish of red-meat, game in case with mushrooms and truffles; otherwise with international dishes based on meat or with structured sauces.
