Pecorino of Pienza
Tuscany is a land of art, culture and excelent table... that it cannot miss above all when you are in holiday! Starting from these promises, the "Pecorino della Val d'Orcia" called also "Pecorino di Pienza" is only one of the delicacies that Tuscany can offer you. This is a chees (in particular "pecorino") among the most well known gastronomics products of the Pieza's city, it's prepared with pasteurized sheep's milk, veal's curd, milk enzymes and salt.
Principally the "Pecorino di Pienza" is costituited by sheep milk of sheep raised in the Val d'Orcia, a land of clayey soil where characteristics aromatic grass grow and give a particular taste at the cheese.
We can place the production of the Pecorino of Pienza between October and July, the Pecorino has a circle shape of 15cm with a yellow or red (only if it's treated with oil and tomato) rind, while it hides inside a dough white/clear yellow whith a sweet taste slightly spicy. Once you have served Pecorino of Pienza on table with nuts or green tomato's jam or with honey you only need a good noble wine and closing your eyes image the peace and the ancient history of the green hills of Pienza and all Tuscany too.
